Cinnamon Spiced, PB & Narna Crumble Crunch (fancy I know…)

Crumble is a favourite of mine. Probably because it reminds me of family Sundays when I was younger. My neighbour would always come for dinner with her infamous apple crumble for dessert. With it’s sugar frosted top and steamy, stewed sweetness below it is the definition of comfort food.
This memory coupled with my devoted relationship to the banana and peanut butter combo meant I had to find a way to marry the two.
So here we have it… Cinnamon Spiced, PB and Narna Crumble Crunch (a slight variation on your traditional crumble and fancy sounding enough that it might be sold at an extortionate price in M&S…).

Topping Ingredients:
Serves 2- 3
(I like to keep some back and use it in porridge or just save for other stewed fruit/when I next roast a banana)
55g Oats
25g Ground Almonds
37 ml Maple Syrup
½ tsp Cinnamon
¼ tsp Vanilla Essence
1 level tbs Melted Coconut oil
Topping Instructions:
Preheat oven to 180 degrees C (160 degrees C fan)
Using a spoon mix together the oats, ground almonds, maple syrup, cinnamon, vanilla essence and melted coconut oil till combined.
Spread evenly on a lined baking tray.
Put in oven for around 15 to 20 mins (turning it over after 10 so evenly browns).
Take out of oven and set aside to cool (should be golden and crumbly looking).
Filling Ingredients:
Serves 1 (or two small portions)
1 Banana (not overly ripe)
1 tbs Peanut Butter (I use smooth)
1 tsp Cinnamon (or half a tsp…I really love cinnamon)

Filling Instructions:
Preheat oven to 200 degrees C (180 degrees C fan oven)
Slice your banana lengthways, leaving in the skin.
Evenly spread peanut butter on both halves (facing up).
Sprinkle the Cinnamon on top (additional option of sugar.
Place in lined tin (foil or baking parchment) and pop in oven for about 10 minutes (check at around 8 that they aren’t burning).
When cool enough to touch, scoop out of skins. (can also just enjoy them like this as a dessert or snack!)
I like to chop one banana half in chunks and place this as a bottom layer.
Then mash the other half of the banana with a fork and spread on top for a texture difference ( I know it might not look the best…but it tastes pretty lush so we allow it, thats the important bit right? XD ).
Sprinkle on your topping (however much you like, saving some in the fridge for later).
These can be microwaved to enjoy hot or (my favourite way) out of the fridge cold. *Served with Oatly Custard = Dream Team
